30-ish Minute Meal- Baked Cod + Couscous with Spinach

Happy Thursday! As the week nears an end, here’s a full 30-ish minute meal to keep your healthy eating on track!

Baked Cod + Couscous with Spinach

For the cod:

1 1/2- 2 pounds cod fillets

4 tablespoons butter

3 teaspoons minced garlic

3 tablespoons parsley

2 tablespoon lemon juice

For the couscous:

2 packages (4.7 ounces each) Pearled Couscous Mix- Roasted Garlic & Olive Oil flavored

Olive oil

For the spinach:

Olive oil

2 minced garlic cloves

1 bag of fresh spinach

Dry seasoning to taste:

Salt

Pepper

Garlic powder

Onion powder

How to:

1) Preheat oven to 400 degrees. While preheating, in a skillet mix garlic, lemon juice and dry seasonings until combined.

2) Coat cod in mix and add more dry seasoning to taste. Place on pan and bake for 10-15 minutes.

3) While cod is cooking, use the same pan to sautee spinach. Simply add olive oil and garlic until fragrant then add in spinach. Cook until tender and season.

4) Prepare couscous in a medium saucepan, bring the water and oil to a boil.

5) Stir in the couscous, cover tightly with a lid, and remove from heat. Let the couscous steam for 5 minutes. Use a fork to fluff the couscous and break up any clumps. Serve warm.

6) Remove cod from oven and coat with remaining sauce, lemon juice, and parsley to serve alongside spinach and couscous.
