Low Carb Zoodle Chicken + Shrimp Alfredo

This creamy low carb alternative to pasta is perfect for a midweek meal!

What you’ll need:

3 zucchinis (or prepared zoodles)

4 tablespoons butter

2 boneless, skinless chicken breasts, thinly sliced

1/2 lb. shrimp, peeled and deveined

4 cloves garlic, minced

1 cup cream

1 cup shredded parmesan cheese, plus more for serving

2 tablespoons fresh parsley, chopped, plus more for serving

Seasoning to taste:

Blackening seasoning

Salt

Ground black pepper

Tony’s

Onion powder

Garlic powder

How to:

1) Spiarilize zucchinis to make noodles. Add to saucepan and lightly sautee for 2-3 minutes and remove from heat.

2) In the same skillet, melt butter over medium heat add chicken and shrimp (seasoned to taste), onion, garlic and cook about 7 minutes. Remove the chicken and shrimp from the pan.

3) Add the cream, Parmesan, and parsley to the pan and bring to a boil, stirring for 3-5 minutes. Put the chicken + shrimp back in the sauce and stir to coat. Remove from the heat and season to taste.

4) Toss the zucchini noodles in with the chicken +shrimp mixture and stir until the noodles are coated evenly. Serve with more Parmesan and parsley, if desired.
