Turkey Quesadillas

A twist to the traditional Mexican quesadilla, this recipe combines shredded turkey, vegetables, and cheese in the tortilla. This simple dish can be served with guacamole and sour cream.

What you’ll need:

1 cup Shredded turkey

1 cup Mexican cheese blend

1 Onion, cut

1 Green pepper, cut

4 Flour tortillas

Olive oil

How to:

1) In a pan on medium heat, add oil and allow to simmer.

2) Sautee onion and bell pepper together until tender. Remove from skillet.

3) Add tortilla and place all ingredients inside. Flip tortilla over and cover with lid until cheese melts.

4) Flip on other side and allow to crisp.

5) Remove from skillet, cut into slices and serve. Repeat 3 times.

Turkey Cobb Salad

A healthy alternative after a day of heavy eating, this salad combines vegetables and protein for a light but filling treat.

What you’ll need:

2 cups sliced turkey

6 large eggs

3 heads of chicory , leaves seperated

2 avocados, sliced

1 Lemon

1 red onion, sliced

1 tsp. Parsley, chopped

4 tsp. apple cider vinegar or red wine vinegar

2 tsp. Dijon mustard

1/4 cup Olive oil

2 cloves Garlic, minced

4 Tomatoes, diced

1/2 cup blue cheese crumbles

Croutons

Turkey bacon bits (optional)

How to:

1) In a pot, bring water to a boil and add eggs. Cook for 8 minutes and remove from heat. Allow to cool and peel.

2) In a bowl, whisk together olive oil, garlic, dijon mustard, parsley, vinegar, and the juice of a lemon together to create dressing.

3) Separate chicory leaves and place on tray/ bowl. Add other items and drizzle with dressing.

4) Top with bacon bits and croutons to serve.

Turkey & Dressing Sandwich

This nontraditional sandwich combines traditional Christmas food and serves it on a warm bun. This savory delight is sure to ignite your taste buds.

What you’ll need:

Turkey, thickly sliced

Gravy

Cranberry Sauce

Dressing

Loaf of bread

Arugula

How to make:

1) In a skillet, heat turkey and dressing separately.

2) Toast bread with olive oil and spread gravy on each slice.

3) Add arugula as a base and layer dressing, cranberry sauce, and turkey.

4) Split sandwich in half and serve with a side of gravy for dipping.

Spicy Turkey Noodles

A simple noodle stir fry should do the trick for your leftover turkey! Add your choice of noodles, veggies, and spices to the turkey and serve with a side of soy sauce!

What you’ll need:

2 cups leftover turkey

1 pack of noodles of choice

4 tsp. olive oil

6 cloves garlic, minced

2 red chili peppers (optional ; for more spice use seeds and for less spice remove seeds)

2 tsp. soy sauce

2 tsp. oyster sauce

2 tsp. brown sugar

2 spring onions, sliced thinly

1/2 cup bean sprouts

1/4 cup peanuts (optional)

1 lime wedge, quartered

Handful of chopped parsley

1) Cook the noodles according to pack instructions and drain/ set aside.

2) In a bowl, mix the soy, oyster sauce, lime juice and sugar together.

3) Heat the oil in a large frying pan or wok and add the garlic, chilli, turkey and spring onions, fry for around 2 mins.

4) Add noodles and the beansprouts and fry for 1 min more.

5) Pour the sauce into the pan and toss everything together well until coated and heated.

6) Serve and top with nuts (optional) and parsley. Squeeze lime wedge over bowl.

Turkey Noodle Soup

Baby it’s cold outside… most places at least! Add some veggies, broth, and spiraled noodles to warm up the house without the fireplace.

1 pack wide egg noodles

3 cups leftover turkey

1 cup carrots, sliced

1/2 cup celery, chopped

3 cups chicken or turkey stock

1 cup water

1 lemon

4 cloves of garlic, minced

1 onion, chopped

4 tsp. olive oil

4 tsp. fresh parsley, chopped

Dry seasonings to taste:

Salt

Pepper

Onion powder

How to make:

1) In a stock pot, heat olive oil and combine onions, garlic, celery, carrots until tender and fragrant.

2) Add water and stock and bring to a boil. Add egg noodles and cook until tender.

3) Reduce heat and add turkey. Stir in dry seasonings to taste and squeeze in the juice from the lemon.

4) Remove from heat and serve. Top with parsley.
