Meatless Monday - 2/10
Happy Monday! Here’s to a new week filled with great successes! If you’re just hopping on to #meatlessmonday or you’ve been riding the train for a while, I hope you enjoy this week’s edition!
Vegetarian Fajitas
This Mexican staple is no stranger on my menu! Filled with flavor and simple to make, you’ll have a new item to add into your rotation.
What you’ll need:
Olive oil
Juice of 3 limes
1/4 cup cilantro, chopped
4 large portabella mushroom caps, sliced
3 bell peppers
1 large onion, sliced
Seasonings to taste:
Ground cumin
Chipotle powder
Garlic powder
Onion powder
Toppings to taste:
Salsa
Shredded cheese
Sour cream
Guacamole
Flour tortillas
How to:
1) In a skillet, heat olive oil on medium-high heat. Add in onions and peppers.
2) Sautee for 3-5 minutes until tender. Add in garlic and mushrooms. Sautee until tender.
3) Add in seasonings to taste and mix well. Squeeze in lime juice and add cilantro.
4) Serve on warm tortilla with toppings to taste.
