You’re two weeks into your fast and I am sure you’re feeling fantastic. I’ve seen several of you post from the recipes from previous weeks and I am so happy this is helping you get through it! Read on for 7 more recipes to try out while you’re nearing the end of the fast! Comment below with what you’d like to see more of. I just might give you some lagniappe this week!

Very Berry Smoothie

Smoothies can jump start your day! Ditch the added sugar and make it at home for a simply fresh blended treat!

What you’ll need:

1/2 cup frozen strawberries

1/2 cup frozen blueberries

1/2 cup frozen raspberries

1/2 cup frozen blackberries

Coconut or almond milk (as needed)

How to:

1) In a blender, mix frozen fruit and milk. Pour content into cup.

Berry Banana Oatmeal

Warm and delicious, these creamy oats topped with berries and bananas will hold you over well into lunch!

What you’ll need:

3/4 quick oats

1 3/4 cup almond milk

2 bananas, sliced

1 cup strawberries, sliced

1/4 cup blueberries

1/2 cup walnuts

cinnamon (to taste)

How to:

1) In a sauce pan, bring milk to a boil and add in oats. Reduce heat and allow to simmer for 3-4 minutes or until tender.

2) Remove from pot and serve in bowl, topped with berries, cinnamon, nuts and banana slices.

Cucumber Rolls

This light and delicious snack is easy to prep and take on the go!

What you’ll need:

1/2 cup hummus

1/2 cup carrots, julienned

1/2 cup cucumber, julienned

1/2 cup spinach, chopped

1/2 cup sundried tomatoes, julienned

How to:

1) Slice cucumber using a Mandoline slicer or vegetable slicer.

2) Lay cucumber slices out and spread hummus onto it. Add remaining vegetables and roll.

3) If necessary, use a toothpick to secure the rolls.

Vegetable Lettuce Wrap

A warm and filling treat, these lettuce wraps are loaded with flavor and filled to the rim.

What you’ll need:

1 onion, diced

Olive oil

1 1/2 cup diced mushrooms

1 zucchini, diced

1 carrot, diced

4 tsp minced garlic

Lettuce hearts

3 tbsp soy sauce

Sesame oil to taste

Seasoning to taste:

Tony’s

Onion powder

Garlic powder

Salt

Pepper

For garnish:

Sesame seeds

Scallions

Nuts

How to:

1) In a skillet, heat up oil and add vegetables.

2) Season to taste and add in soy sauce and sesame oil.

3) Remove from pan and put filling into lettuce hearts. Garnish and serve.

Spicy Cabbage Soup

Turn up the heat with this quick dish! Simmer and serve for a delightful treat.

What you’ll need:

2 tablespoon olive oil

1 onion, diced

8 cloves garlic, minced

8 cups vegetable stock

2 carrots, diced

1 stalk celery, diced

1 pound Yukon gold potatoes, diced

2 (10-ounce) cans fire-roasted diced tomatoes and green chiles 

1 (15-ounce) can Great Northern beans

1 head cabbage, roughly chopped

1 bag baby spinach or kale

Seasoning to taste:

Tony’s

Onion powder

Garlic powder

Ground cumin

Crushed red pepper flakes (optional)

Salt

Black pepper

How to:

1) In a large stock pot, sautee onion and olive oil until tender.

2) Add in all vegetables (except spinach or kale) and broth, cooking until it simmers. Season as desired.

3) After 20 minutes, add in greens and simmer an additional 5 minutes. Serve.

Curry Chickpeas

This savory dish will leave you wanting more. A few ingredients in one pot make this meal even more desirable!

What you’ll need:

2 tbsp olive oil

1 red onion 

6 cloves garlic, minced

1 inch fresh ginger peeled and minced

1 can (14oz.) diced tomatoes 

1 can (14oz) coconut milk 

1 can (16oz) chickpeas 

Seasoning to taste:

Garam masala

Ground turmeric

Ground black pepper 

Salt

Onion powder

Garlic powder

How to:

1) In a stock pot, heat olive oil and onions on medium high heat until tender.

2) Reduce the heat to medium. Add the garlic and ginger until fragrant. Stir in dry seasonings and coat.

3) Stir in tomatoes, coconut milk, and chickpeas. Bring to a boil then reduce to medium-low heat until chickpeas are tender (12-15 mins). Remove from heat and serve.

Spinach with Garbanzo Beans

This easy dish can be a side or a light meal.

What you’ll need:

2 tablespoon olive oil

6 cloves garlic, minced

1 onion, diced

1 bag of fresh chopped spinach

1 (12 ounce) can garbanzo beans

Seasoning to taste:

Cumin

Salt

Pepper

Tony’s

Onion powder

Garlic powder

How to:

1) In a skillet, heat oil on medium high heat.

2) Add in onions and cook until transparent. Add garbanzo beans and cook for 5-8 more minutes.

3) Once tender, add in spinach, garlic and dry seasonings to taste. Cook down an additional 8-10 minutes and serve.
