Meatless Monday- 1/20
As the few remaining games of football season approach (Pro Bowl & Super Bowl) I wanted to share a recipe so good it’ll make you ditch the frozen pre-made patties and opt for a meal with ingredients you can see for yourself!
Homemade Black Bean Veggie Burger
With minimal ingredients, this easy to make and easy to serve meal is sure to make the greatest hits list for #meatlessmonday. Serve with regular or sweet potato fries (bonus points if you bake or use the air fryer )
What you’ll need:
1 can black beans, drained and rinsed
1/2 green bell pepper, diced
1/2 onion, diced
4 cloves garlic, minced
1 egg (if vegan, use egg substitute)
Dry seasonings to taste:
Chili powder
Cumin
Tony’s
Garlic Powder
Onion Powder
How to:
1) Preheat oven to 375 degrees and lightly oil a baking sheet.
2) In a bowl, mash black beans until pasty. Combine with onions, garlic and bell pepper in food processor.
3) Remove from food processor and return to bowl, mixing in dry seasoning and egg. Stir in bread crumbs until moldable.
4) Divide into 4 patties and place on baking sheet.
5) Cook on each side for 10 minutes, dress, and serve.
