Four Recipes that'll Make You Love your Air Fryer!

After last week’s recipes, I know you’ve fallen in or back in love with your air fryer! I mean, who wouldn’t? Well, I’m back with more easy dishes that’ll make you fall deeper in love with this genius contraption! Comment below with more of what you’d like to see!

Whole Thyme Chicken

This recipe is a perfect combo of citrus and herb, leaving lots of the sodium from other seasonings out. The chicken will fall off the bone and leave the family scrapping for the skin.

What you’ll need:

4 tbsp butter, softened

1 whole chicken about 3-5 pounds

4 sprigs thyme

2 lemons, sliced

Juice of one lemon

4 cloves garlic, whole

Dry seasonings to taste

How to:

1) Rinse and dry chicken after removing from packaging. Remove neck and giblets and reserve to make chicken stock that can be used for later.

2) Loosen skin from the breast meat of the chicken by running a small spatula or your fingers gently underneath the skin. Spread butter over the outside and inside of the chicken.

3) Season to taste with dry seasonings. Stuff inside of chicken with thyme, garlic, and lemons. Squeeze the juice of one lemon on the outside.

4) Place the whole chicken breast-side down in the basket of your air fryer at 350 degrees and cook the chicken for 30 minutes.

7) After 30 minutes is up, pull out the basket and flip the chicken breast side up. Place back in the air fryer at 350 degrees for 15-25 minutes, or until a meat thermometer reaches 165 degrees. 

8) Allow chicken to rest for about 10 minutes before serving. Enjoy!

Beef and Vegetable Stir Fry

This Asian inspired dish combines beef, vegetables, and noodles for a saucy sensation. Long noodles mean good luck in Asian culture, so slurp up!

What you’ll need:

14 oz rump steak, cubed

3 tablespoons toasted sesame oil

20 oz stir fry vegetables

6 tablespoons hoisin sauce

2 tablespoons low sodium soy sauce

10 oz fine egg noodles, cooked

Dry seasoning to taste

Green onions, to garnish

How to:

1) Add oil to air fryer and season beef. Cook for 5 minutes. Remove and keep warm.

2) Add in stir fry vegetables and remaining oil. Cook for 5 minutes.

3) In a bowl, mix together the hoisin sauce and 2 tablespoons of water; add to the vegetables together with the beef. Stir well with a wooden spoon. Cook for 3-4 minutes or until hot.

4) Serve with cooked fine egg noodles. Top with green onions.

Eggplant Fries

I love eggplant fries! This delicious treat can be served with tzatziki sauce or greek yogurt.

What you’ll need:

1 medium eggplant

1/2 cup Italian bread crumbs

1/2 cup freshly grated Parmesan cheese

1/4 cup all-purpose flour

2 eggs

Dry seasonings to taste:

Italian seasoning

Salt

Basil

Garlic powder

Onion powder

Black pepper

How to:

1) Slice eggplant into rounds, then cut each round into sticks. Pat dry. Preheat an air fryer to 370 degrees.

2) Combine bread crumbs, Parmesan cheese, Italian seasoning, salt, basil, garlic powder, onion powder, and black pepper in a shallow bowl. Pour flour into a second shallow bowl. Beat eggs in a third bowl.

3) Dip eggplant sticks in flour, then in beaten eggs, and then coat with bread crumb mixture. Place on a plate and let rest for 5 minutes.

4) Place eggplant sticks in basket, making sure they are not touching; cook in batches if necessary.

5) Cook in the preheated air fryer for 8 to 10 minutes. Shake basket and continue cooking to desired crispiness, an additional 4 to 6 minutes.

6) Serve as desired with sauce or by itself.

Cauliflower Crust Pizza

This Keto friendly, low-carb meal will have you not missing the dough!

What you’ll need:

1 Caulipower Crust

1 can pizza sauce

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

Fresh basil

Additional toppings as desired

Dry seasonings to taste

How to:

1) Preheat air fryer to 400 degrees and grease.

2) Add sauce and desired toppings to pizza.

3) Place in air fryer for 5-7 minutes or until crust is browned and cheese is melted.

4) Allow to cool for 3 minutes and serve with desired garnishes.
