Mediterranean Chicken - Your All-In-One Sheet Pan Meal

Cooking should never feel like a chore. In fact, it should be fun. Okay, well fun-ish for those who don’t love the kitchen. This easy and quick meal explores the taste of the Mediterranean and explodes with bright and bold flavors. All you need is one sheet pan, so the mess is minimal!

Mediterranean Chicken

This simple all in one meal combines a variety of flavors and colors to create a burst in your mouth bite. It’ll have you feeling like you’re in the Amafi Coast without the price of that plane ticket.

What you’ll need:

1/2 cup extra-virgin olive oil 

1 lemon, juiced

2 tablespoons balsamic vinegar

4 chicken thighs with skin

1 red onion, sliced into petals

2 bell peppers, thinly sliced

4 cloves of garlic, whole

1 pound baby potatoes, halved

1 lemon, sliced

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

10 pitted kalamata olives

1 cup chopped artichoke hearts

1/4 cup capers

1/2 cup sun dried tomatoes

Seasoning to taste:

Dried tarragon

Dried oregano

Salt

Black pepper

Tony’s

Garlic powder

Onion powder

How to:

1) Preheat oven to 425 degrees. Line sheet pan with aluminum foil and grease lightly with olive oil.

2) In a bowl, mix together the remaining olive oil, lemon juice, dry seasonings, and vinegar. Add chicken, vegetables, and potatoes then coat well.

3) Evenly place mixture onto sheet pan and top with lemons, artichokes, sun dried tomatoes and capers.

4) Bake for about 40 minutes then top with parsley, feta, and olives to serve.
