One Pan Dinner : The Secret to Surviving the Work Week without Eating Out
It’s Friday and you’re struggling with the idea of getting a meal to the table. Here’s a quick, easy, less mess meal that can help combat that issue! This herb flank steak and vegetables opt for “no carbs”, but you can easily throw in some Yukon potatoes or sweet potatoes if desired.
Herb Flank Steak and Vegetables
What you’ll need:
1 1/2 lb. flank steak
1 lb. asparagus, trimmed
2 cups mushrooms
1 onion, chopped
6 garlic cloves, chopped
4 tsp. olive oil
1/2 stick butter
1/2 cup beef stock
2 sprigs fresh rosemary
2 sprigs fresh thyme
Fresh parsley (garnish)
Dry seasonings to taste:
Tony’s
Salt
Pepper
Garlic powder
Onion powder
How to:
1) Preheat oven to 400 degrees and oil pan.
2) Add vegetables and fresh herbs to pan, seasoning to taste. Pour beef broth in pan then place in oven and roast for 15 minutes.
3) Place seasoned flank steak in middle of baking sheet and roast an additional 10 minutes. Flip and repeat on other side for 10 minutes.
4) Melt butter and garlic together for baste steak.
5) Allow steak to rest for 10 minutes. Pour garlic butter on top of steak. Garnish with parsley, cut and serve with vegetables.
