Nothing Bundt Chicken
Pro tip: to keep the moisture and evenly cook a whole chicken, place it in a bundt pan. The juices will seep into your veggies and give you an all in one easy meal!
What you’ll need:
1 whole chicken, cleaned
1/2 lb. new potatoes, halfed
4 cloves garlic, peeled
1 onion, chopped
1 cup whole baby carrots
1 cup brussels sprouts, halved
2 sprigs of rosemary
2 sprigs of thyme
1 cup chicken broth
1 stick of butter
1 lemon
Olive oil
Seasonings to taste:
Tony’s
Garlic powder
Onion powder
Salt
Pepper
How to:
1) Preheat oven to 425 degrees. Grease bundt pan with olive oil and set to the side.
2) In a bowl, melt butter and then add chicken. Season to taste with dry seasonings.
3) In bundt pan, add vegetables and chicken broth. Season to taste.
4) Place chicken in bundt pan, covering the opening with foil. Stuff with lemons and sprigs of rosemary and thyme.
5) Cook for about an hour. Allow to rest for 15 minutes before slicing chicken and serving vegetables with extra juice
